Description
A simple and delicious version of the classic Eggs Benedict made with English muffins, poached eggs, sliced beef or turkey ham, and rich homemade hollandaise sauce. Perfect for an easy yet elegant brunch at home.
Ingredients
- 2 English muffins, split
- 4 slices beef or turkey ham
- 4 eggs
- 1 tbsp white vinegar
- 1/2 cup butter, melted
- 3 egg yolks
- 1 tbsp lemon juice
- 1/4 tsp salt
- Cayenne pepper or paprika (optional, for garnish)
Instructions
- Make the hollandaise sauce: In a heatproof bowl, whisk egg yolks with lemon juice. Place over a pot of simmering water using the double boiler method, whisking constantly.
- Slowly drizzle in the melted butter while continuing to whisk until the sauce thickens. Season with salt and cayenne pepper if desired. Keep warm.
- Toast the English muffins until golden and crisp.
- Cook the beef or turkey ham slices in a skillet over medium heat for 1–2 minutes per side until lightly browned.
- Poach the eggs: Bring a saucepan of water to a gentle simmer and add a splash of vinegar. Crack each egg into a small bowl, then gently slide it into the water. Poach for 3–4 minutes until the whites are set and the yolks are still soft. Repeat for all eggs.
- Assemble: Place two muffin halves on each plate. Top each with a slice of cooked meat, a poached egg, and a generous spoonful of hollandaise sauce.
- Garnish with paprika or cayenne if desired and serve immediately.

- Hollandaise sauce is best served warm and made fresh.
