Ingredients
- 3/4 cup (90g) all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup (150g) granulated sugar
- 2 tablespoons dark rum
- 1 teaspoon vanilla extract
- 8 tablespoons (113g) unsalted butter, melted and cooled
- 3 apples, peeled, cored, and diced
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
- In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, whisk the eggs and sugar until pale and thick.
- Whisk in the rum and vanilla extract.
- Stir in half of the flour mixture, then half of the melted butter. Repeat with the remaining flour and butter until fully incorporated.
- Fold in the diced apples.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40 to 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve plain or with a dusting of powdered sugar or a dollop of whipped cream.

- Use a mix of sweet and tart apples for a more complex flavor.
- This cake keeps well for several days at room temperature.
- Dark rum adds depth, but you can substitute with apple juice for a non-alcoholic version.
