Ingredients
- 4 large eggs
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup milk
- 10 (1-inch) slices brioche (or thick sliced Texas toast or stale white sandwich bread)
- 4 tablespoons butter
Instructions
- In a shallow dish, whisk together eggs, cinnamon, vanilla extract, and salt until fully combined. Whisk in the milk.
- Dip one slice of bread at a time into the egg mixture, soaking for 10–30 seconds per side. Do not pre-soak; cook immediately after dipping.
- Heat a skillet or griddle over medium heat and melt about 1 teaspoon of butter per slice. Place soaked bread onto the pan and cook until golden brown and cooked through, about 3–4 minutes per side. Avoid overcrowding the pan.
- Repeat with remaining slices, adding more butter as needed. Serve immediately or keep warm in a 100°F oven until ready to serve.

- For softer, custardy centers, soak bread longer; for crispier toast, dip quickly.
- Stale or slightly dry bread works best as it absorbs the mixture without falling apart.
