Description

Easy Frito Pie is a hearty Tex-Mex casserole made with seasoned ground beef, beans, enchilada sauce, crunchy corn chips, and melted cheese. It’s a comforting, crowd-pleasing dish perfect for family dinners or casual gatherings.


Ingredients

  • 1 pound lean ground beef
  • 1 small onion, peeled and diced
  • 1 ounce taco seasoning (1 pouch or homemade)
  • 2/3 cup water
  • 10 ounces enchilada sauce (1 can)
  • 15 ounces pinto beans, drained and rinsed
  • 1 (9.25 ounce) bag Fritos corn chips, divided
  • 2 cups shredded Mexican blend cheese, divided
  • 1 green onion, chopped
  • Sour cream and/or guacamole for topping (optional)

Instructions

  1. Preheat the oven to 350°F and lightly spray a 9×13-inch glass baking dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef and diced onion, stirring frequently, until the beef is fully browned. Drain excess fat.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 3–4 minutes, stirring often.
  4. Add the enchilada sauce and pinto beans to the skillet and stir until well combined.
  5. Spread 4 cups of the Fritos corn chips evenly in the bottom of the prepared baking dish and sprinkle with 1 cup of the shredded cheese.
  6. Evenly spread the meat and bean mixture over the chips, then top with the remaining cheese.
  7. Bake for 18–20 minutes, until the casserole is hot and bubbly.
  8. Remove from the oven and sprinkle the remaining Fritos on top. Let cool slightly before serving.
  9. Garnish with chopped green onion and serve with sour cream or guacamole if desired.

Notes

  • For extra flavor, add diced green chilies or jalapeños to the meat mixture.
  • You can substitute ground turkey for ground beef for a lighter option.
  • Add diced tomatoes, shredded lettuce, or sliced olives as additional toppings.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
