Description
Easy Frito Pie is a hearty Tex-Mex casserole made with seasoned ground beef, beans, enchilada sauce, crunchy corn chips, and melted cheese. It’s a comforting, crowd-pleasing dish perfect for family dinners or casual gatherings.
Ingredients
- 1 pound lean ground beef
- 1 small onion, peeled and diced
- 1 ounce taco seasoning (1 pouch or homemade)
- 2/3 cup water
- 10 ounces enchilada sauce (1 can)
- 15 ounces pinto beans, drained and rinsed
- 1 (9.25 ounce) bag Fritos corn chips, divided
- 2 cups shredded Mexican blend cheese, divided
- 1 green onion, chopped
- Sour cream and/or guacamole for topping (optional)
Instructions
- Preheat the oven to 350°F and lightly spray a 9×13-inch glass baking dish with non-stick cooking spray.
- In a large skillet over medium heat, cook the ground beef and diced onion, stirring frequently, until the beef is fully browned. Drain excess fat.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 3–4 minutes, stirring often.
- Add the enchilada sauce and pinto beans to the skillet and stir until well combined.
- Spread 4 cups of the Fritos corn chips evenly in the bottom of the prepared baking dish and sprinkle with 1 cup of the shredded cheese.
- Evenly spread the meat and bean mixture over the chips, then top with the remaining cheese.
- Bake for 18–20 minutes, until the casserole is hot and bubbly.
- Remove from the oven and sprinkle the remaining Fritos on top. Let cool slightly before serving.
- Garnish with chopped green onion and serve with sour cream or guacamole if desired.
Notes
- For extra flavor, add diced green chilies or jalapeños to the meat mixture.
- You can substitute ground turkey for ground beef for a lighter option.
- Add diced tomatoes, shredded lettuce, or sliced olives as additional toppings.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
