Description

These easy gluten-free waffles are crisp on the outside and fluffy on the inside, made with a simple homemade flour blend. Perfect for a quick breakfast or brunch that everyone will enjoy.


Ingredients

  • 2 cups gum-free gluten free flour blend (185 g superfine white rice flour + 62 g potato starch + 33 g tapioca starch/flour)
  • 1/4 teaspoon xanthan gum
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 eggs (at room temperature, separated)
  • 3 tablespoons virgin coconut oil (melted and cooled, or neutral oil)
  • 1 cup plain whole milk yogurt (at room temperature)
  • 3/4 cup milk (at room temperature)

Instructions

  1. Preheat and prepare your waffle iron according to the manufacturer’s directions.
  2. In a large bowl, whisk together the flour blend, xanthan gum, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whip the egg whites until stiff (but not dry) peaks form.
  4. In another bowl, beat the egg yolks with the oil until creamy.
  5. Add the yogurt and milk to the yolk mixture and blend until combined. Add the dry ingredients and mix until smooth and thickly pourable.
  6. Gently fold the beaten egg whites into the batter until only a few streaks remain.
  7. Pour about 3/4 to 1 cup of batter into the waffle iron and spread evenly.
  8. Close the lid and cook until steam stops escaping, about 4–5 minutes.
  9. Remove and serve immediately. Repeat with remaining batter.
  10. If needed, reheat waffles in a 350°F oven for about 3 minutes.
  11. To store, cool completely, wrap tightly, and freeze. Reheat before serving.

Notes

  • You can substitute coconut oil with vegetable or canola oil.
  • Do not overmix when folding egg whites to maintain fluffiness.
  • Serve with fresh fruit, syrup, or yogurt for added flavor.
  • Waffles freeze well for quick future breakfasts.
