This Easy Greek Bruschetta recipe is a Mediterranean twist on the classic Italian appetizer. Topped with juicy tomatoes, creamy feta cheese, and a blend of herbs and olive oil, it’s a fresh and flavorful dish perfect for entertaining or a quick snack.


Ingredients

  • 1 French baguette or Italian bread, sliced
  • 34 ripe tomatoes, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 red onion, finely chopped
  • 12 cloves garlic, minced
  • 1/4 cup kalamata olives, sliced (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 23 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette and place the slices on a baking sheet.
  3. Toast the bread in the oven for about 5–7 minutes, or until golden and crisp.
  4. In a bowl, combine the diced tomatoes, red onion, garlic, olives (if using), parsley, oregano, olive oil, and red wine vinegar.
  5. Season the mixture with salt and pepper to taste, then stir in the crumbled feta cheese.
  6. Top each toasted bread slice with a spoonful of the tomato-feta mixture.
  7. Drizzle with a bit more olive oil if desired and serve immediately.

  • Use fresh, ripe tomatoes for the best flavor.
