Description
A bright and zesty no-bake coconut lemon slice made with crushed biscuits, condensed milk, coconut, and fresh lemon, topped with a tangy lemon icing. Perfect for afternoon tea or an easy dessert.
Ingredients
- 250g sweet plain biscuits, crushed
- 1 cup desiccated coconut
- 395g sweetened condensed milk (1 can)
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 125g unsalted butter, melted
- 1 1/2 cups icing sugar
- 2 tablespoons additional lemon juice (for icing)
- 1 teaspoon lemon zest (extra, for garnish)
Instructions
- Line a 20cm square baking tin with baking paper.
- In a large bowl, combine crushed biscuits and desiccated coconut.
- Add melted butter, condensed milk, lemon juice, and lemon zest. Mix until well combined.
- Press mixture firmly into the prepared tin and smooth the surface.
- Refrigerate for 1 hour or until firm.
- To make the icing, mix icing sugar with lemon juice until smooth and spreadable.
- Spread icing evenly over the chilled base and sprinkle with extra lemon zest.
- Return to the refrigerator for 30–60 minutes until icing is set. Slice and serve.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- For a stronger lemon flavor, add extra zest to the base mixture.
- Ensure the slice is fully chilled before cutting for clean edges.
- Can be frozen for up to 1 month.
