Description

A bright and zesty no-bake coconut lemon slice made with crushed biscuits, condensed milk, coconut, and fresh lemon, topped with a tangy lemon icing. Perfect for afternoon tea or an easy dessert.


Ingredients

  • 250g sweet plain biscuits, crushed
  • 1 cup desiccated coconut
  • 395g sweetened condensed milk (1 can)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 125g unsalted butter, melted
  • 1 1/2 cups icing sugar
  • 2 tablespoons additional lemon juice (for icing)
  • 1 teaspoon lemon zest (extra, for garnish)

Instructions

  1. Line a 20cm square baking tin with baking paper.
  2. In a large bowl, combine crushed biscuits and desiccated coconut.
  3. Add melted butter, condensed milk, lemon juice, and lemon zest. Mix until well combined.
  4. Press mixture firmly into the prepared tin and smooth the surface.
  5. Refrigerate for 1 hour or until firm.
  6. To make the icing, mix icing sugar with lemon juice until smooth and spreadable.
  7. Spread icing evenly over the chilled base and sprinkle with extra lemon zest.
  8. Return to the refrigerator for 30–60 minutes until icing is set. Slice and serve.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • For a stronger lemon flavor, add extra zest to the base mixture.
  • Ensure the slice is fully chilled before cutting for clean edges.
