Description

These Easy Pistachio Protein Balls are a no-bake, high-protein snack made with just a few wholesome ingredients. Each ball contains 10g of protein, making them perfect for post-workout fuel or a quick energy boost during the day.


Ingredients

  • 1 cup shelled pistachios
  • 1/2 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Add pistachios to a food processor and pulse until coarsely ground.
  2. Add oats and pulse again until combined.
  3. Add protein powder, peanut butter, maple syrup, vanilla extract, and salt. Blend until the mixture is sticky and well combined.
  4. Roll the mixture into balls using your hands (about 2 tablespoons per ball).
  5. Place balls on a tray and refrigerate for at least 30 minutes to set.
  6. Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Notes

  • You can substitute almond butter or another nut butter if preferred.
  • Use a protein powder you enjoy the taste of for best results.
