Ingredients
- 2 pounds potatoes, peeled and diced
- 1 onion, chopped
- 3 stalks celery, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or cream for a richer soup)
- Salt and pepper to taste
- 1 tablespoon butter
- Optional toppings: shredded cheese, green onions, sour cream, crumbled bacon (omit for vegetarian)
Instructions
- Peel and dice the potatoes. Chop the onion and celery, and mince the garlic.
- In a large pot, melt the butter over medium heat. Add the onion and celery and sauté until soft, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
- Use a potato masher or immersion blender to mash some of the potatoes for a thicker consistency, leaving some chunks for texture.
- Add the milk and stir well. Simmer for another 5 minutes. Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
