Description

These Easy Sausage Breakfast Muffins are a perfect combination of savory, hearty, and delicious. Packed with sausage, cheese, and eggs, they’re great for busy mornings or meal prep.

Ingredients

1 lb breakfast sausage (crumbled)

1 cup shredded cheddar cheese

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup milk

2 large eggs

1/4 cup melted butter

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  2. In a large skillet, cook the sausage over medium heat, breaking it apart as it cooks, until browned and fully cooked. Drain any excess fat and set aside.
  3. In a large mixing bowl, whisk together the flour, baking powder, salt, pepper, garlic powder, and onion powder.
  4. In another bowl, whisk together the milk, eggs, and melted butter.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Gently fold in the cooked sausage, shredded cheddar cheese, and chopped green onions if using.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 of the way.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool slightly before removing them from the pan.

Notes

  1. Vegetarian Option: Swap the sausage for crumbled plant-based sausage or vegetables like bell peppers, spinach, and mushrooms.
  2. Storage: Store muffins in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
  3. Reheating: Microwave for 20-30 seconds or warm in a 350°F (175°C) oven for 10 minutes.
  4. For a spicy kick, add chopped jalapeños, cayenne pepper, or hot sauce.
  5. Can be made gluten-free by using a gluten-free flour blend.
