Description

These easy sausage tacos are a quick and flavorful twist on traditional tacos, featuring savory ground sausage, sautéed vegetables, and your favorite toppings, all wrapped in warm tortillas. Perfect for a weeknight dinner or casual gathering.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, finely chopped
  • 1/2 medium red bell pepper, finely chopped
  • 1 clove garlic, minced
  • 1 pound bulk sausage (pork, turkey, or chicken)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • 8 small flour or corn tortillas
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup salsa or pico de gallo
  • 1 avocado, sliced (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, cooking until soft, about 5 minutes.
  3. Stir in the garlic and cook for another 30 seconds.
  4. Add the sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 8 to 10 minutes.
  5. Stir in chili powder, cumin, oregano, and salt to taste. Cook for 1 more minute to blend the flavors.
  6. Warm the tortillas in a dry skillet, in the oven, or microwave until pliable.
  7. Spoon the sausage mixture into the tortillas.
  8. Top with shredded cheese, cilantro, sour cream, salsa or pico de gallo, and avocado if using.
  9. Serve immediately while hot.

Notes

  • You can use any type of bulk sausage—pork, turkey, or chicken—for this recipe.
  • Add extra veggies like corn or zucchini for variety.
  • Double the batch and save leftovers for breakfast tacos.
  • Use store-bought taco seasoning if you don’t have individual spices.
