Description

This easy no-bake strawberry pie is made with just a few simple ingredients and comes together quickly for a fresh, fruity dessert perfect for summer.


Ingredients

  • 1 pre-made or homemade graham cracker crust
  • 1 lb fresh strawberries, hulled and sliced
  • 1/2 cup water
  • 2 tbsp cornstarch
  • 1/2 cup sweetener of choice (such as sugar, maple syrup, or erythritol)
  • 1/8 tsp salt
  • 1 tsp pure vanilla extract

Instructions

  1. Place sliced strawberries evenly into the prepared pie crust.
  2. In a saucepan over medium heat, whisk together the water, cornstarch, sweetener, and salt.
  3. Bring the mixture to a boil while whisking constantly, then lower to a simmer and cook until thickened.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the thickened mixture evenly over the strawberries in the crust.
  6. Refrigerate the pie for at least 6 hours or until set.
  7. Slice and serve chilled. Optionally top with whipped cream or additional strawberries.

Notes

  • You can use a store-bought graham cracker crust or make your own.
  • Make sure the cornstarch mixture is fully thickened before removing it from the heat.
  • This pie is best served chilled and can be made a day in advance.
