Ingredients
4 large bell peppers (any color)
1 lb ground beef or turkey
1 cup cooked rice (white, brown, or cauliflower rice for a low-carb version)
1/2 cup diced onion
1 cup shredded cheese (cheddar, mozzarella, or a blend)
1 can (14 oz) diced tomatoes, drained
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley (optional for garnish)
Instructions

Preheat your oven to 375°F (190°C).

Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.

Add the ground meat and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

Stir in the cooked rice, diced tomatoes, garlic powder, paprika, oregano, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to combine.

Stuff each bell pepper with the meat and rice mixture. Top with shredded cheese.

Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until the peppers are tender.
