Description

A savory quiche filled with creamy eggs, fresh spinach, tangy feta, and juicy cherry tomatoes, all baked in a flaky puff pastry crust.


Ingredients

  • 8.5 oz puff pastry (rolled out to fit into your pie dish and over the rim)
  • 5 large eggs
  • 2/3 cup heavy cream
  • 1/2 cup milk
  • 2 cups baby spinach (chopped if larger)
  • 1/4 cup grated parmesan
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • black pepper (to taste)
  • 6 oz feta cheese (coarsely crumbled)
  • 1/2 pound cherry tomatoes
  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9-inch (23 cm) deep-dish pie plate and fit the puff pastry inside, letting it hang over the rim. Prick the bottom with a fork.
  2. Line the pastry with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes, then remove weights and bake for another 10 minutes.
  3. In a large bowl, whisk together eggs, cream, and milk. Stir in spinach, parmesan, oregano, salt, and black pepper.
  4. Remove the crust from the oven and let cool for 5 minutes. Reduce oven temperature to 360°F (180°C).
  5. Scatter feta cheese over the crust, pour in the egg mixture, and arrange olive oil–brushed cherry tomatoes on top.
  6. Bake for 20 minutes, then cover the crust edges with foil or a pie shield. Continue baking for 30–35 minutes until the center is set.
  7. Let rest for 10 minutes before serving, or cool completely and refrigerate for up to 24 hours.

Notes

  • Use frozen spinach if fresh is unavailable; thaw and drain well before adding.
  • Substitute feta with goat cheese for a milder flavor.
  • Cover crust edges early if they brown too quickly.
  • Serve warm or chilled with a simple green salad.
  • Store leftovers covered in the refrigerator for up to 3 days.
