Description
A classic British comfort food, Cauliflower Cheese features tender cauliflower florets baked in a rich, creamy cheese sauce. It’s perfect as a side dish or a vegetarian main.
Ingredients
- 1 large head of cauliflower, cut into florets
- 50g / 3.5 tbsp butter
- 3 tbsp plain flour
- 2 cups (500 ml) milk, warm
- 1 tsp Dijon mustard
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups (200g) grated cheese (cheddar, gruyere, or mix)
- 1/4 cup (25g) extra cheese for topping
Instructions
- Preheat oven to 220°C/430°F (200°C fan).
- Bring a large pot of salted water to a boil. Cook cauliflower florets for 3 minutes until just tender. Drain and set aside to steam dry.
- In a saucepan, melt butter over medium heat. Add flour and cook, stirring constantly, for 1 minute.
- Gradually add warm milk while whisking to avoid lumps. Cook for 2–3 minutes until thickened.
- Remove from heat, stir in mustard, nutmeg, salt, pepper, and cheese until melted and smooth.
- Place cauliflower in a baking dish. Pour cheese sauce over the top and gently mix to coat.
- Sprinkle with extra cheese and bake for 25 minutes until golden and bubbling.
- Let rest for a few minutes before serving.
Notes
- Use a mix of cheddar and gruyere for best flavor.
- Can be made ahead and reheated.
- Serve as a side with roast meats or as a vegetarian main.
