Description

This Chicken Enchilada Casserole is a hearty, layered dish filled with shredded chicken, enchilada sauce, tortillas, and melted cheese. It delivers all the flavors of traditional enchiladas in an easy-to-assemble casserole—perfect for a comforting family dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 (10-ounce) can red enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 3 cups shredded cooked chicken
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 8 small flour tortillas, cut into quarters
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup sour cream, for serving

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. Add garlic, cumin, chili powder, salt, and black pepper. Stir and cook for 1 minute.
  4. Add enchilada sauce and green chiles. Bring to a simmer, then stir in the shredded chicken and chopped cilantro. Cook for 2–3 minutes, then remove from heat.
  5. Spread a small amount of the chicken mixture on the bottom of a 9×13-inch baking dish. Layer with tortilla pieces, then more chicken mixture, and a handful of cheese. Repeat the layers until ingredients are used up, finishing with cheese on top.
  6. Cover with foil and bake for 20 minutes. Uncover and bake for another 10 minutes, until the cheese is melted and bubbly.
  7. Garnish with more cilantro and serve with sour cream.
