Description

These easy egg burritos are a delicious and customizable breakfast option packed with fluffy scrambled eggs, melted cheese, and your favorite fillings all wrapped in a warm tortilla.


Ingredients

  • 12 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 1/2 cups shredded cheddar cheese
  • 8 (10-inch) flour tortillas, warmed
  • Optional fillings: cooked breakfast sausage, bacon, diced ham, sautéed vegetables, salsa, hash browns

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper until well blended.
  2. In a large nonstick skillet, melt butter over medium heat. Add egg mixture and cook, gently pushing eggs from the edges to the center until just set and fluffy.
  3. Remove from heat and stir in shredded cheese until melted and combined.
  4. To assemble, spoon egg mixture into the center of each warmed tortilla.
  5. Add any optional fillings like cooked sausage, bacon, or vegetables as desired.
  6. Fold the sides over and roll up tightly into burritos.
