These soft and chewy Eggnog Cookies are infused with the classic holiday flavor of eggnog and warm spices, then topped with a sweet eggnog glaze. Perfect for festive gatherings or cozy winter treats.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 3/4 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large egg yolks
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 1 cup powdered sugar (for glaze)
- 2 to 3 tablespoons eggnog (for glaze)
- Ground nutmeg, for garnish
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 to 3 minutes.
- Add the egg yolks, eggnog, vanilla extract, and rum extract to the butter mixture and beat until well combined.
- Gradually add the flour mixture to the wet ingredients and mix just until combined.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and eggnog until smooth. Drizzle over cooled cookies and sprinkle with a pinch of nutmeg.
