Description

These soft and chewy Eggnog Cookies are infused with the classic holiday flavor of eggnog and warm spices, then topped with a sweet eggnog glaze. Perfect for festive gatherings or cozy winter treats.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large egg yolks
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract
  • 1 cup powdered sugar (for glaze)
  • 2 to 3 tablespoons eggnog (for glaze)
  • Ground nutmeg, for garnish

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
  3. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 to 3 minutes.
  4. Add the egg yolks, eggnog, vanilla extract, and rum extract to the butter mixture and beat until well combined.
  5. Gradually add the flour mixture to the wet ingredients and mix just until combined.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10 to 12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar and eggnog until smooth. Drizzle over cooled cookies and sprinkle with a pinch of nutmeg.
