Description
This rich and creamy eggnog fudge is a festive holiday treat made with white chocolate, eggnog, and warm spices, perfect for gifting or enjoying with a cozy drink.
Ingredients
- 2 cups granulated sugar
- ½ cup unsalted butter
- ¾ cup eggnog
- ½ teaspoon ground nutmeg
- 1 (12-ounce) package white chocolate chips
- 1 (7-ounce) jar marshmallow crème
- 1 teaspoon rum extract
- Optional: additional ground nutmeg for garnish
Instructions
- Line an 8×8-inch baking dish with aluminum foil and spray with nonstick spray. Set aside.
- In a medium saucepan over medium heat, combine sugar, butter, eggnog, and nutmeg.
- Bring mixture to a boil and stir continuously. Cook until the mixture reaches 234°F (soft ball stage), about 6 to 8 minutes.
- Remove from heat and quickly stir in white chocolate chips until melted and smooth.
- Add marshmallow crème and rum extract. Stir until fully incorporated.
- Pour the fudge mixture into the prepared pan and spread evenly.
- Optional: Sprinkle additional nutmeg over the top.
- Let cool at room temperature until fully set, about 4 hours or refrigerate for quicker setting.
- Once set, lift the fudge from the pan using foil edges and cut into squares.
Notes
- Use a candy thermometer to ensure proper temperature is reached.
- Don’t substitute eggnog with milk; it gives the fudge its flavor.
- For a non-alcoholic version, the rum extract is flavor-only and contains no alcohol.
- Refrigerate leftovers in an airtight container for up to a week.
