Ingredients
- 1 lb elbow macaroni
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 4 cups sharp cheddar cheese, shredded
- 2 cups Gruyere cheese, shredded
- Salt and pepper to taste
- 1 1/2 cups panko breadcrumbs
- 2 tbsp butter, melted
- 1/2 tsp smoked paprika (optional)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 3-quart baking dish and set aside.
- Cook the macaroni according to the package instructions until al dente. Drain and set aside.
- In a large saucepan, melt 1/2 cup butter over medium heat. Stir in the flour and cook for about 1 minute until golden and bubbly.
- Gradually whisk in the milk and heavy cream, ensuring no lumps. Continue to cook, whisking frequently, until the mixture thickens, about 5–7 minutes.
- Remove from heat and stir in the cheddar and Gruyere cheeses until melted and smooth. Season with salt and pepper to taste.
- Add the cooked macaroni to the cheese sauce and stir until fully coated.
- Pour the mac and cheese into the prepared baking dish and spread evenly.
- In a small bowl, combine the panko breadcrumbs, melted butter, and smoked paprika (if using). Sprinkle the mixture evenly over the mac and cheese.
- Bake uncovered for 25–30 minutes, or until the top is golden brown and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Use freshly shredded cheese for best melting and flavor.
- Feel free to swap Gruyere with mozzarella, fontina, or Monterey Jack for variety.
- Add cooked bacon or diced jalapeños for extra flavor.
- This can be assembled ahead and baked later—just add a few extra minutes to the baking time if chilled.
