Description

Ingredients

  • 2 boneless, skinless chicken thighs or breasts
  • 2 packs ramen noodles (instant or fresh)
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream or half-and-half
  • 1 cup chicken broth
  • 2 tbsp soy sauce
  • 12 tbsp chili paste or sriracha (adjust to taste)
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 green onions, chopped (for garnish)
  • 2 soft-boiled eggs (optional, for topping)
  • Red pepper flakes (optional, for extra heat)

Instructions

  1. Season the chicken with salt, pepper, and a little chili paste or sriracha.
  2. Heat olive oil in a pan over medium-high heat. Sear the chicken on both sides until golden and cooked through. Remove and let rest before slicing.
  3. In the same pan, add sesame oil and sauté the minced garlic until fragrant.
  4. Pour in the chicken broth and heavy cream. Stir and bring to a simmer.
  5. Add soy sauce and more chili paste to taste. Let the sauce thicken slightly.
  6. Cook the ramen noodles according to package directions, then drain well.
  7. Add the cooked noodles to the sauce and toss to coat evenly.
  8. Slice the rested chicken and serve over the noodles.
  9. Top with green onions, red pepper flakes, and soft-boiled eggs if using.

Notes

  • Use tofu or mushrooms for a vegetarian version and replace chicken broth with vegetable broth.
  • Adjust spiciness by increasing or decreasing chili paste or omitting red pepper flakes.
  • Fresh ramen noodles elevate the dish but instant noodles work just as well.
  • Store leftovers in the fridge for up to 3 days and reheat gently with a splash of broth.
  • Do not freeze, as the cream sauce may separate.
