Ingredients

  • 2 tbsp olive oil
  • 2 large leeks, cleaned and chopped
  • 4 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped leeks and sauté for 5–7 minutes, until softened.
  3. Stir in minced garlic, thyme, and oregano. Cook for 1–2 minutes until fragrant.
  4. Add the butter beans and stir to combine.
  5. Pour in the vegetable broth and let the mixture simmer for 8–10 minutes, allowing flavors to meld and liquid to reduce slightly.
  6. Stir in lemon juice and season with salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley if desired.

Notes

  • Use fresh herbs instead of dried for a brighter flavor.
  • This dish can be served over rice, quinoa, or crusty bread.
