Description

Ingredients
- 2 tbsp olive oil
- 2 large leeks, cleaned and chopped
- 4 garlic cloves, minced
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 2 cans (15 oz each) butter beans, drained and rinsed
- 1/2 cup vegetable broth
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped leeks and sauté for 5–7 minutes, until softened.
- Stir in minced garlic, thyme, and oregano. Cook for 1–2 minutes until fragrant.
- Add the butter beans and stir to combine.
- Pour in the vegetable broth and let the mixture simmer for 8–10 minutes, allowing flavors to meld and liquid to reduce slightly.
- Stir in lemon juice and season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
- Use fresh herbs instead of dried for a brighter flavor.
- This dish can be served over rice, quinoa, or crusty bread.
- Store leftovers in an airtight container in the fridge for up to 3 days.
