Soft, chewy, and naturally gluten-free, these 3-ingredient flourless peanut butter cookies are the ultimate quick and easy treat, ready in minutes with no flour required.
Ingredients
- 1 cup peanut butter (smooth or crunchy)
- 1/2 cup granulated sugar or coconut sugar
- 1 large egg
- 1/2 tsp vanilla extract (optional)
- Pinch of salt (optional, if peanut butter is unsalted)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, stir together the peanut butter, sugar, egg, and optional vanilla and salt until fully combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place on the prepared baking sheet.
- Flatten each cookie slightly using a fork in a crisscross pattern.
- Bake for 8-10 minutes, or until the edges are just set. Do not overbake.
- Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use natural or commercial peanut butter based on your texture preference.
- Cookies will be very soft out of the oven but will firm up as they cool.
- Add a few chocolate chips or chopped peanuts for variation.
