Description

Soft, chewy, and naturally gluten-free, these 3-ingredient flourless peanut butter cookies are the ultimate quick and easy treat, ready in minutes with no flour required.


Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • 1/2 cup granulated sugar or coconut sugar
  • 1 large egg
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt (optional, if peanut butter is unsalted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, stir together the peanut butter, sugar, egg, and optional vanilla and salt until fully combined.
  3. Scoop tablespoon-sized portions of dough and roll them into balls. Place on the prepared baking sheet.
  4. Flatten each cookie slightly using a fork in a crisscross pattern.
  5. Bake for 8-10 minutes, or until the edges are just set. Do not overbake.
  6. Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use natural or commercial peanut butter based on your texture preference.
  • Cookies will be very soft out of the oven but will firm up as they cool.
  • Add a few chocolate chips or chopped peanuts for variation.
