Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 2 tablespoons brown sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1 cup pumpkin puree
- 2 large eggs
- 2 tablespoons oil (plus extra for cooking)
Instructions
- In a large bowl, mix together all dry ingredients.
- In a separate bowl or measuring jug, whisk together all wet ingredients.
- Pour the wet ingredients over the dry ingredients and gently mix just until combined using a wooden spoon or spatula. Do not overmix; stir only until no dry flour remains.
- Heat a griddle or skillet over medium-high heat and lightly grease with oil or cooking spray. Pour about 1/4 cup of batter per pancake and cook until bubbles form on the surface, about 3 minutes.
- Flip and cook for another 2 minutes or until golden brown. Serve immediately with your favorite toppings.
Notes
- Do not overmix the batter or pancakes will become dense.
- For sweeter pancakes, double the brown sugar.
- Serve with maple syrup, nuts, or fruit.
- Pancakes can be frozen and reheated for later use.
