Ingredients
- 2 cups all-purpose flour (for biscuits)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 pound breakfast pork sausage
- 1/4 cup all-purpose flour (for gravy)
- 2 1/2 cups whole milk
- 1/2 teaspoon salt (to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper (optional)
Instructions
- Preheat the oven to 450°F (230°C).
- In a mixing bowl, whisk together flour, baking powder, and salt.
- Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Pour in cold buttermilk and stir until just combined.
- Turn the dough out onto a floured surface. Gently pat into a rectangle and fold over a few times to create layers.
- Pat dough to about 1-inch thickness and cut out biscuits using a round cutter.
- Place biscuits on a baking sheet, slightly touching, and bake for 12–15 minutes or until golden brown.
- While biscuits bake, cook sausage in a large skillet over medium heat until browned and crumbled.
- Sprinkle flour over sausage and stir to coat. Cook for 1–2 minutes to eliminate raw flour taste.
- Gradually add milk, stirring constantly until the gravy thickens.
- Season with salt, black pepper, and optional crushed red pepper.
- Remove biscuits from oven and serve hot topped with sausage gravy.
Notes
- Use cold butter and buttermilk for fluffy biscuits.
- Don’t overwork the biscuit dough to keep it tender.
- For extra richness, stir a splash of cream into the gravy.
- Store leftovers separately and reheat gently with a splash of milk.
- Gravy can be customized with sautéed onions, mushrooms, or bell peppers.
