Description

Fluffy Southern biscuits with creamy sausage gravy are a classic comfort food breakfast, featuring tender, buttery biscuits smothered in rich, savory sausage gravy. This easy homemade recipe delivers a satisfying and crowd-pleasing Southern meal.

Ingredients

  • 2 cups all-purpose flour (for biscuits)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 pound breakfast pork sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 1/2 cups whole milk
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Pour in cold buttermilk and stir until just combined.
  5. Turn the dough out onto a floured surface. Gently pat into a rectangle and fold over a few times to create layers.
  6. Pat dough to about 1-inch thickness and cut out biscuits using a round cutter.
  7. Place biscuits on a baking sheet, slightly touching, and bake for 12–15 minutes or until golden brown.
  8. While biscuits bake, cook sausage in a large skillet over medium heat until browned and crumbled.
  9. Sprinkle flour over sausage and stir to coat. Cook for 1–2 minutes to eliminate raw flour taste.
  10. Gradually add milk, stirring constantly until the gravy thickens.
  11. Season with salt, black pepper, and optional crushed red pepper.
  12. Remove biscuits from oven and serve hot topped with sausage gravy.

Notes

  • Use cold butter and buttermilk for fluffy biscuits.
  • Don’t overwork the biscuit dough to keep it tender.
  • For extra richness, stir a splash of cream into the gravy.
  • Store leftovers separately and reheat gently with a splash of milk.
  • Gravy can be customized with sautéed onions, mushrooms, or bell peppers.
