Description

These Fluffy Vegan Cinnamon Roll Pancakes are a delicious, plant-based twist on a breakfast classic, combining the flavors of gooey cinnamon rolls with soft, fluffy pancakes. Perfect for a special morning treat, they’re made without dairy or eggs, but still packed with sweetness and spice.


Ingredients

  • 1 cup unsweetened almond milk (or any plant milk)
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 2 tbsp sugar (cane or coconut sugar)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tbsp vegan butter or coconut oil (for cooking)
  • Cinnamon Swirl: 2 tbsp brown sugar, 1/2 tsp cinnamon, 1 tsp melted vegan butter
  • Vegan Cream Cheese Icing: 1/4 cup vegan cream cheese, 1/4 cup powdered sugar, 1-2 tsp plant milk

Instructions

  1. In a mixing bowl, whisk together almond milk, apple cider vinegar, and vanilla. Let sit for a few minutes to create a vegan buttermilk.
  2. In another bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Combine wet and dry ingredients, stirring until just mixed. Let the batter rest for 5 minutes.
  4. In a small bowl, mix cinnamon swirl ingredients and set aside.
  5. Heat a nonstick skillet over medium heat and lightly grease with vegan butter or oil.
  6. Pour 1/4 cup of batter per pancake onto the skillet. Swirl some cinnamon mixture into each pancake with a toothpick.
  7. Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook another 2 minutes.
  8. In a small bowl, mix vegan cream cheese, powdered sugar, and plant milk until smooth.
  9. Drizzle the icing over warm pancakes before serving.
