Ingredients
- 1 cup unsweetened almond milk (or any plant milk)
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup all-purpose flour (or gluten-free flour blend)
- 2 tbsp sugar (cane or coconut sugar)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 tbsp vegan butter or coconut oil (for cooking)
- Cinnamon Swirl: 2 tbsp brown sugar, 1/2 tsp cinnamon, 1 tsp melted vegan butter
- Vegan Cream Cheese Icing: 1/4 cup vegan cream cheese, 1/4 cup powdered sugar, 1-2 tsp plant milk
Instructions
- In a mixing bowl, whisk together almond milk, apple cider vinegar, and vanilla. Let sit for a few minutes to create a vegan buttermilk.
- In another bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Combine wet and dry ingredients, stirring until just mixed. Let the batter rest for 5 minutes.
- In a small bowl, mix cinnamon swirl ingredients and set aside.
- Heat a nonstick skillet over medium heat and lightly grease with vegan butter or oil.
- Pour 1/4 cup of batter per pancake onto the skillet. Swirl some cinnamon mixture into each pancake with a toothpick.
- Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook another 2 minutes.
- In a small bowl, mix vegan cream cheese, powdered sugar, and plant milk until smooth.
- Drizzle the icing over warm pancakes before serving.
