Description
A classic French Almond Pear Gratin made with sweet ripe pears, a creamy almond filling, and baked until golden. Naturally gluten-free, this dessert is light, elegant, and simple to make.
Ingredients
- 4 ripe pears (such as Bosc or Anjou), peeled, cored and sliced
- 3 large eggs
- 100g (1/2 cup) granulated sugar
- 100g (1 cup) almond flour
- 120ml (1/2 cup) heavy cream
- 1 teaspoon pure vanilla extract
- 2 tablespoons unsalted butter, cut into small pieces
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
- Preheat your oven to 350°F (180°C) and butter a 9-inch (23cm) gratin dish or similar baking dish.
- Arrange the sliced pears evenly in the bottom of the dish.
- In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
- Add in the almond flour, heavy cream, and vanilla extract. Whisk until smooth and fully combined.
- Pour the almond mixture evenly over the pears in the dish.
- Dot the top with small pieces of butter and sprinkle with 1 tablespoon of granulated sugar.
- Bake for 35–40 minutes, until the top is golden and set.
- Let cool slightly before serving. Serve warm or at room temperature.
Notes
- Use ripe but firm pears for best texture and flavor.
- This gratin is naturally gluten-free thanks to almond flour.
- Can be served warm or at room temperature, ideal with a dollop of whipped cream or ice cream.
