Description

A classic French Almond Pear Gratin made with sweet ripe pears, a creamy almond filling, and baked until golden. Naturally gluten-free, this dessert is light, elegant, and simple to make.


Ingredients

  • 4 ripe pears (such as Bosc or Anjou), peeled, cored and sliced
  • 3 large eggs
  • 100g (1/2 cup) granulated sugar
  • 100g (1 cup) almond flour
  • 120ml (1/2 cup) heavy cream
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (180°C) and butter a 9-inch (23cm) gratin dish or similar baking dish.
  2. Arrange the sliced pears evenly in the bottom of the dish.
  3. In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
  4. Add in the almond flour, heavy cream, and vanilla extract. Whisk until smooth and fully combined.
  5. Pour the almond mixture evenly over the pears in the dish.
  6. Dot the top with small pieces of butter and sprinkle with 1 tablespoon of granulated sugar.
  7. Bake for 35–40 minutes, until the top is golden and set.
  8. Let cool slightly before serving. Serve warm or at room temperature.
