Description

A simple, vibrant fresh tomato sauce made with ripe tomatoes, garlic, onion, and herbs. It is light, flavorful, and perfect tossed with your favorite pasta.


Ingredients

  • 500 g fresh tomatoes
  • 1 red onion
  • 3 cloves garlic
  • 1 small dried chilli
  • 1 tbsp tomato purée
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • Water

Instructions

  1. Finely chop the onion and dried chilli. Peel and finely chop the garlic.
  2. Roughly chop the tomatoes; there is no need to remove the skins.
  3. Heat the olive oil in a pan over low heat and gently cook the onion, garlic, and chilli for a few minutes until softened.
  4. Add the chopped tomatoes and cook gently for a few minutes.
  5. Stir in the tomato purée, dried basil, dried oregano, salt, and pepper, then simmer for a few more minutes.
  6. Blend the sauce with a hand blender until fairly smooth.
  7. Add a little water as needed and stir until the sauce reaches your desired consistency, then serve with pasta.

Notes

  • Use ripe, in-season tomatoes for the best flavor.
  • Adjust the chilli to make the sauce milder or spicier.
  • Add a splash of pasta cooking water instead of plain water for extra body.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve over spaghetti, penne, or your favorite pasta shape.
