Description
A simple, vibrant fresh tomato sauce made with ripe tomatoes, garlic, onion, and herbs. It is light, flavorful, and perfect tossed with your favorite pasta.
Ingredients
- 500 g fresh tomatoes
- 1 red onion
- 3 cloves garlic
- 1 small dried chilli
- 1 tbsp tomato purée
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
- Water
Instructions
- Finely chop the onion and dried chilli. Peel and finely chop the garlic.
- Roughly chop the tomatoes; there is no need to remove the skins.
- Heat the olive oil in a pan over low heat and gently cook the onion, garlic, and chilli for a few minutes until softened.
- Add the chopped tomatoes and cook gently for a few minutes.
- Stir in the tomato purée, dried basil, dried oregano, salt, and pepper, then simmer for a few more minutes.
- Blend the sauce with a hand blender until fairly smooth.
- Add a little water as needed and stir until the sauce reaches your desired consistency, then serve with pasta.
Notes
- Use ripe, in-season tomatoes for the best flavor.
- Adjust the chilli to make the sauce milder or spicier.
- Add a splash of pasta cooking water instead of plain water for extra body.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Serve over spaghetti, penne, or your favorite pasta shape.
