Ingredients

  • 4 slices bread
  • 1 cup baked beans (canned or homemade)
  • 1 tbsp oil
  • 1 tbsp butter
  • 4 links chicken sausages
  • 2 medium tomatoes
  • 8 mushrooms
  • 4 large eggs
  • Salt, to taste
  • Black pepper, to taste
  • 2 spring onions, chopped

Instructions

  1. Start by preparing the baked beans. You can use canned baked beans, but homemade spiced beans add extra flavor.
  2. Slice the bread and toast it with a little butter until crispy. Set aside.
  3. Heat oil in a large frying pan. Add the chicken sausages, tomatoes, and mushrooms. Cook over medium to low heat, tossing occasionally until they are well-seared and cooked through. Once done, set them aside in the pan.
  4. In the same pan, melt the butter. Crack the eggs into the pan, season with salt and pepper, and cook to your liking.
  5. Now, plate the breakfast: Add the sausages, fried eggs, grilled mushrooms, tomatoes, toast, and baked beans. Garnish with chopped spring onions and serve immediately.
