Description

These soft and chewy Funfetti Cookies are bursting with colorful sprinkles and rich vanilla flavor, making them the perfect festive treat for birthdays, holidays, or anytime you need a sweet pick-me-up. Easy to make in under 30 minutes, these cookies are a party in every bite!


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups (330g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup rainbow sprinkles (jimmies-style preferred)
  • Optional: 1/4 cup white chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

  • Gradually mix dry ingredients into the wet mixture until just combined.

  • Fold in rainbow sprinkles (and white chocolate chips, if using).

  • Scoop dough using a tablespoon or cookie scoop and place onto prepared baking sheets about 2 inches apart.

  • Bake for 10–12 minutes, or until the edges are lightly golden.

  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use jimmies style sprinkles to prevent color bleeding into the dough.

  • Do not overbake — cookies will continue to set as they cool.

  • Dough can be chilled for 30 minutes to reduce spreading, especially in warmer kitchens.

  • Swap vanilla extract with almond extract for a fun twist.
