Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 2 3/4 cups (330g) all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup rainbow sprinkles (jimmies-style preferred)
- Optional: 1/4 cup white chocolate chips
Instructions
-
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
-
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
-
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
-
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
-
Gradually mix dry ingredients into the wet mixture until just combined.
-
Fold in rainbow sprinkles (and white chocolate chips, if using).
-
Scoop dough using a tablespoon or cookie scoop and place onto prepared baking sheets about 2 inches apart.
-
Bake for 10–12 minutes, or until the edges are lightly golden.
-
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
-
Use jimmies style sprinkles to prevent color bleeding into the dough.
-
Do not overbake — cookies will continue to set as they cool.
-
Dough can be chilled for 30 minutes to reduce spreading, especially in warmer kitchens.
-
Swap vanilla extract with almond extract for a fun twist.
