Description

This homemade garlic aioli is a creamy, flavorful sauce made with fresh garlic, egg yolk, lemon juice, and oil. It’s perfect as a dip, sandwich spread, or accompaniment to fries and grilled meats.


Ingredients

  • 1 egg yolk
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon water
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1 cup vegetable oil (or light olive oil)
  • 3 cloves garlic, smashed and minced to a paste

Instructions

  1. In a food processor or blender, add the egg yolk, lemon juice, water, Dijon mustard, and kosher salt.
  2. Blend for a few seconds until combined.
  3. With the machine running, slowly drizzle in the oil very gradually to allow the emulsion to form.
  4. Once the oil is fully incorporated and the mixture is thick and creamy, add the garlic paste and pulse to combine.
  5. Taste and adjust seasoning if needed. Chill before serving.

Notes

  • Use fresh garlic for the best flavor, and mash it into a paste to avoid chunks.
  • If the aioli breaks (separates), you can fix it by starting a new yolk in a clean bowl and slowly whisking in the broken mixture.
  • Store in the refrigerator in an airtight container for up to one week.
