Description

Juicy roasted mushrooms tossed in a rich garlic butter sauce, finished with herbs for a simple and flavorful side dish.

Ingredients

  • 500 g mushrooms, cleaned
  • 3 tbsp butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme (optional)

Instructions

  1. Preheat oven to 220°C (425°F).
  2. Place mushrooms in a baking dish or tray.
  3. In a small bowl, mix melted butter, olive oil, garlic, salt, and pepper.
  4. Pour the garlic butter mixture over the mushrooms and toss to coat evenly.
  5. Spread mushrooms in a single layer.
  6. Roast for 20–25 minutes, stirring once halfway through, until mushrooms are tender and golden.
  7. Remove from oven and sprinkle with fresh parsley and thyme if using.
  8. Serve warm.

Notes

  • Use small button or cremini mushrooms for best texture.
  • Avoid overcrowding the pan to ensure proper roasting.
  • Can be made dairy-free by substituting butter with more olive oil.
  • Store leftovers in the refrigerator for up to 3 days.
  • Great as a side dish or topping for steak, chicken, or toast.
