Description

These Garlic Herb Roasted Sweet Potatoes with Parmesan are a flavorful and easy side dish featuring tender roasted sweet potatoes tossed with garlic, herbs, and a touch of Parmesan cheese for added depth and richness.


Ingredients

  • 2 1/2 lbs sweet potatoes, peeled and diced into 3/4-inch cubes
  • 3 Tbsp olive oil
  • 3 cloves garlic, minced (1 Tbsp)
  • 1 1/2 tsp chopped fresh thyme
  • 1 1/2 tsp chopped fresh rosemary
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup (about 1 1/2 oz) finely shredded Parmesan cheese
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, toss together diced sweet potatoes, olive oil, garlic, thyme, rosemary, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in an even layer on the prepared baking sheet.
  4. Roast in the preheated oven for about 35–40 minutes, tossing once halfway through, until tender and golden brown.
  5. Remove from oven and immediately toss with Parmesan cheese and fresh parsley.
  6. Serve warm and enjoy.
