Description

Ingredients

  • 12 ounces fettuccine or linguine pasta
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1 cup chopped yellow squash
  • 1 cup chopped red bell pepper
  • 1 cup chopped broccoli florets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and garlic and sauté for 2-3 minutes until fragrant.
  4. Add carrots, zucchini, yellow squash, red bell pepper, and broccoli. Sauté for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. Season with salt, black pepper, and crushed red pepper flakes if using.
  6. Add vegetable broth and simmer for 2-3 minutes to let flavors combine.
  7. Stir in cooked pasta, Parmesan cheese, fresh parsley, and lemon juice. Toss to combine well.
  8. Serve immediately, garnished with extra Parmesan and parsley if desired.
