Description

These Garlic Lemon Green Beans are a quick, easy, and flavorful side dish made with fresh green beans sautéed in olive oil with garlic and brightened up with a splash of lemon juice.


Ingredients

  • 1 1/2 pounds fresh green beans, ends trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper (or to taste)
  • 12 tablespoons fresh lemon juice

Instructions

  1. Bring a large pot of salted water to a boil. Add green beans and cook for about 3-4 minutes, until just tender but still crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
  4. Add the green beans to the skillet and toss to coat with the garlic and oil. Cook for 2-3 minutes until heated through.
  5. Season with salt and pepper. Remove from heat and add lemon juice to taste.
  6. Toss well and serve warm.
