Description

Garlic Mozzarella Chicken Bomb Skewers are a mouthwatering, easy-to-make dish that features tender chicken wrapped around gooey mozzarella cheese, all infused with a rich garlic butter marinade. Perfect for grilling or baking, these skewers are ideal for family dinners, parties, or BBQs. The irresistible combination of savory chicken, melty cheese, and aromatic garlic makes every bite an unforgettable treat!

Ingredients

4 boneless, skinless chicken breasts, cut into bite-sized chunks

8 ounces mozzarella cheese, cut into cubes

2 tablespoons olive oil

1 tablespoon minced garlic

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  • Prep the Chicken: Cut the chicken breasts into bite-sized chunks and set them aside.

  • Make the Marinade: In a bowl, combine olive oil, minced garlic, oregano, basil, salt, pepper, and crushed red pepper flakes. Stir well to combine.

  • Marinate the Chicken: Add the chicken to the marinade, tossing to coat evenly. Let marinate for at least 30 minutes.

  • Assemble the Skewers: Take a marinated chicken chunk, place a mozzarella cube in the center, and wrap the chicken around the cheese to form a “bomb” shape. Thread the chicken bombs onto skewers.

  • Cook the Skewers: Preheat your grill or oven. For grilling, heat to medium-high and grill the skewers for 6-8 minutes on each side until fully cooked. For baking, place skewers on a baking sheet and bake at 400°F for 20-25 minutes, or until the chicken is golden and cooked through.

  • Serve: Remove from the grill or oven, garnish with fresh parsley, and serve hot.

Notes

  1. You can use alternative cheeses like cheddar, gouda, or pepper jack for a unique twist.
  2. Add veggies like bell peppers or zucchini for added flavor.
  3. For extra heat, increase the red pepper flakes or drizzle with hot sauce.
  4. Wrap the chicken bombs with bacon for a smoky flavor.
  5. You can make the skewers ahead of time and refrigerate for up to 24 hours before cooking.
