Description

This Garlic Parmesan Chicken and Potatoes recipe is a hearty, one-pan dish featuring tender chicken and crispy potatoes roasted with garlic, herbs, and a generous sprinkle of Parmesan cheese.


Ingredients

  • 34 medium Yukon Gold potatoes, diced
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with half the olive oil, half the minced garlic, salt, pepper, and half the Italian seasoning.
  3. Spread the potatoes on one side of a baking sheet lined with parchment paper.
  4. In the same bowl, toss the chicken with the remaining olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
  5. Place the chicken on the other side of the baking sheet.
  6. Sprinkle the Parmesan cheese evenly over the chicken and potatoes.
  7. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
  8. Garnish with fresh parsley and serve hot.
