Description

Buttery, melt-in-your-mouth snowball cookies infused with warm gingerbread spices and coated in a sweet dusting of powdered sugar. A festive holiday treat!


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar, plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup finely chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat butter and ½ cup powdered sugar until light and fluffy. Mix in vanilla extract.
  3. In a separate bowl, whisk together flour, cinnamon, ginger, cloves, nutmeg, and salt. Gradually add the dry ingredients to the butter mixture, stirring until combined. Fold in chopped nuts if using.
  4. Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 1 inch apart.
  5. Bake for 12-14 minutes, or until the edges are set but the cookies remain pale.
  6. Remove from the oven and let cool for 5 minutes. While still warm, roll the cookies in powdered sugar.
  7. Once completely cooled, roll them again in powdered sugar for a snowy finish.

Notes

  • You can use either pecans or walnuts, or omit nuts entirely.
  • Rolling the cookies twice in powdered sugar ensures a thick, snowy coating.
