Description

Soft and cakey glazed pumpkin cookies infused with warm fall spices and topped with a sweet vanilla glaze. These cookies are perfect for autumn and holiday gatherings.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups powdered sugar (for glaze)
  • 3 tbsp milk (for glaze)
  • 1 tbsp melted butter (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the pumpkin, egg, and vanilla extract to the butter mixture and beat until combined.
  5. Gradually mix in the dry ingredients until fully incorporated.
  6. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 15–18 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. To make the glaze, whisk together powdered sugar, milk, melted butter, and vanilla extract until smooth.
  10. Drizzle or spread the glaze over the cooled cookies and let set before serving.

  • You can freeze the cookies (without glaze) for up to 2 months.
