Description

This Goat Cheese Crostini with Garlic & Rosemary Marinated Sun-Dried Tomatoes is an easy yet elegant appetizer perfect for entertaining. Creamy goat cheese is spread over crispy toasted baguette slices and topped with flavorful sun-dried tomatoes marinated in olive oil, garlic, and rosemary.


Ingredients

  • 1 French baguette, sliced into 1/2 inch pieces
  • 4 oz goat cheese, softened
  • 1/2 cup sun-dried tomatoes (not in oil), roughly chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, finely chopped
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Arrange baguette slices on a baking sheet and toast in the oven for 8-10 minutes until golden and crisp. Set aside to cool slightly.
  2. In a small saucepan over medium-low heat, combine olive oil, garlic, rosemary, and red pepper flakes. Cook for 2-3 minutes until fragrant, then remove from heat.
  3. Add the chopped sun-dried tomatoes to the warm oil mixture. Stir to combine and let marinate for at least 10 minutes.
  4. Spread about 1 tsp of goat cheese on each toasted baguette slice.
  5. Spoon a small amount of the marinated sun-dried tomato mixture over the goat cheese.
  6. Sprinkle with salt and pepper to taste and serve immediately.

Notes

  • Use sun-dried tomatoes not packed in oil for best results.
  • Marinate the tomato mixture ahead of time to enhance flavor.
  • Serve warm or at room temperature.
  • You can substitute thyme or oregano for rosemary if preferred.
