Description

These crispy, golden baked salmon bites are seasoned to perfection and finished with a creamy avocado drizzle for a fresh, rich flavor. A wholesome yet indulgent dish perfect for a quick dinner or healthy snack.

Ingredients

  • 1 lb salmon fillet, cut into bite-sized cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup breadcrumbs (preferably panko)
  • 1 tablespoon fresh parsley, chopped
  • 1 ripe avocado
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder (for drizzle)
  • Salt and pepper to taste (for drizzle)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper.
  3. Add the salmon cubes to the bowl and toss until evenly coated with the seasoning mixture.
  4. Sprinkle the breadcrumbs over the salmon and gently toss to coat each piece evenly.
  5. Arrange the coated salmon bites in a single layer on the prepared baking sheet.
  6. Bake for 12 to 15 minutes, or until the salmon is cooked through and golden brown on the edges.
  7. While the salmon bakes, prepare the avocado drizzle by blending the avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper until smooth and creamy.
  8. Remove the salmon bites from the oven and sprinkle with fresh parsley.
  9. Serve warm, drizzled generously with the avocado sauce.
