Description

Gond Ke Laddu is a traditional Indian sweet made with edible gum, wheat flour, nuts, seeds, jaggery, and ghee. These nourishing laddus are rich, crunchy, and perfect for winter or festive snacking.


Ingredients

  • 1/2 cup + 1 tsp ghee, divided
  • 2/3 cup gond (50 gms)
  • 1/2 cup + 2 tbsp chopped cashews (50 gms)
  • 1/4 cup + 1 tbsp chopped almonds (50 gms)
  • 1/4 cup + 2 tbsp melon seeds (50 gms)
  • 1 cup atta / wheat flour
  • 1 tbsp khus khus
  • 1/4 cup grated khopra (25 gms)
  • 1 cup jaggery (180 gms)
  • 2 tbsp water

Instructions

  1. Heat 3 tablespoons of ghee in a kadai and fry the gond in small batches on low heat until puffed. Transfer to a plate.
  2. In the same kadai, fry the cashews on low heat for 2-3 minutes until light golden. Remove and transfer to the plate.
  3. Fry the melon seeds for 1-2 minutes until lightly golden. Add almonds and fry briefly until golden. Transfer everything to the plate.
  4. Crush the fried gond lightly using your hands or a pestle.
  5. Add the remaining tablespoon of ghee to the kadai and roast the atta on low heat for 3-4 minutes until golden brown and aromatic.
  6. Add khus khus and grated khopra, mix well, and roast for another minute.
  7. Combine the roasted flour mixture with the fried nuts, seeds, and crushed gond.
  8. Add 1 teaspoon of ghee to the kadai along with jaggery and water. Heat until the jaggery melts completely.
  9. Pour the melted jaggery mixture into the prepared ingredients and mix thoroughly.
  10. Shape the mixture into lemon-sized laddus while warm and serve.

Notes

  • Shape the laddus while the mixture is still warm for easier binding.
  • You can add cardamom powder for extra flavor.
  • Store in an airtight container for up to 2 weeks.
