Description
A crunchy, naturally sweetened grain-free coconut granola made with nuts, seeds, and coconut flakes. Perfect for breakfast or snacking, this gluten-free granola is baked until golden and crisp.
Ingredients
- 3 cups unsweetened coconut flakes
- 1 cup sliced almonds
- 1 cup chopped pecans
- 1/2 cup sunflower seeds
- 2 tablespoons chia seeds
- 2 tablespoons ground flaxseed
- 1/3 cup melted coconut oil
- 1/3 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
Instructions
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, combine coconut flakes, almonds, pecans, sunflower seeds, chia seeds, flaxseed, cinnamon, and salt.
- In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix until evenly coated.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 20–25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and allow to cool completely to crisp up.
- Store in an airtight container at room temperature for up to 2 weeks.
