Description

These chewy butterscotch blondies are a nostalgic dessert loaded with buttery, caramel-like flavor from butterscotch chips. Soft and chewy with a slightly crisp edge, they’re easy to make and perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, whisk the melted butter and brown sugar until smooth and combined.
  4. Add the eggs and vanilla extract to the butter mixture and mix until well blended.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Fold in the butterscotch chips evenly.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out with just a few moist crumbs.
  9. Let the blondies cool completely in the pan before cutting into squares.

Notes

  • Add chopped nuts, chocolate chips, or dried fruit for variety.
  • Swirl in peanut butter or Nutella before baking for extra richness.
  • Sprinkle with sea salt before baking for a sweet-salty flavor boost.
  • Store at room temperature for up to 4 days, or refrigerate for a week.
  • Freeze for up to 3 months; thaw and reheat briefly before serving.
