Description

These crunchy granola cups are a wholesome and versatile treat, perfect for breakfast or snacks. Filled with yogurt and fresh fruit, they offer a delicious balance of texture and flavor.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped nuts (almonds or walnuts)
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup yogurt (for filling)
  • Fresh fruit (berries, banana slices, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a large bowl, mix together the oats, chopped nuts, cinnamon, and salt.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Scoop the mixture into the muffin tin and press firmly into the bottom and sides to form cups.
  6. Bake for 12–15 minutes or until golden brown.
  7. Allow the granola cups to cool completely before removing from the tin.
  8. Fill each cup with yogurt and top with fresh fruit before serving.

Notes

  • Use maple syrup instead of honey to make the recipe vegan.
  • Store unfilled granola cups in an airtight container for up to 5 days.
