This Grape and Apple Chicken Salad is a refreshing twist on the classic, combining tender chicken with crisp apples, juicy grapes, and a creamy, lightly sweet dressing. Perfect for lunches, picnics, or light dinners.


Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup red or green grapes, halved
  • 1 crisp apple, diced
  • 2 stalks celery, finely chopped
  • 2 green onions or 1/4 red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large bowl, combine cooked chicken, grapes, diced apple, celery, and onion.
  2. In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, and honey until smooth.
  3. Pour the dressing over the chicken mixture and toss gently to coat evenly.
  4. Season with salt and black pepper to taste.
  5. Fold in nuts or parsley if using.
  6. Cover and refrigerate for at least 20 minutes before serving to allow flavors to meld.
