Ingredients
- 2 cups cooked chicken breast, diced or shredded
- 1 cup red or green grapes, halved
- 1 crisp apple, diced
- 2 stalks celery, finely chopped
- 2 green onions or 1/4 red onion, finely chopped
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt or sour cream
- 1 tablespoon lemon juice
- 1 teaspoon honey or maple syrup
- Salt, to taste
- Black pepper, to taste
- Optional: 1/4 cup chopped walnuts or pecans
- Optional: 1 tablespoon fresh parsley, chopped
Instructions
- In a large bowl, combine cooked chicken, grapes, diced apple, celery, and onion.
- In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, and honey until smooth.
- Pour the dressing over the chicken mixture and toss gently to coat evenly.
- Season with salt and black pepper to taste.
- Fold in nuts or parsley if using.
