Description

These Greek Chicken Bowls are a fresh, flavorful, and healthy meal made with juicy marinated chicken, lemon rice, tzatziki, and your favorite toppings like cucumber, tomato, olives, and feta. Perfect for meal prep or a quick dinner.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked lemon rice or brown rice
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1 cup tzatziki sauce
  • Lemon wedges, for serving
  • Fresh chopped parsley, for garnish

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the chicken and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove chicken from marinade and grill for 5–7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes, then slice.
  6. To assemble the bowls, divide the rice among 4 bowls.
  7. Top each bowl with sliced chicken, cucumber, tomatoes, olives, feta, and red onion.
  8. Add a dollop of tzatziki sauce and garnish with fresh parsley and lemon wedges.
  9. Serve immediately or store in the refrigerator for meal prep.

  • You can use store-bought or homemade tzatziki sauce.
