Description

These Greek Lemon Chicken Skewers are marinated in a zesty lemon-herb mixture and grilled to perfection. Served with a creamy homemade tzatziki sauce, they’re perfect for a light dinner or summer gathering.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 wooden or metal skewers
  • For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, peeled, seeded, and finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, finely minced
  • Salt and pepper, to taste

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  3. Add chicken pieces to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes or up to 2 hours.
  4. While chicken marinates, prepare the tzatziki sauce: Combine yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper. Mix well and refrigerate until ready to serve.
  5. Preheat grill to medium-high heat and oil the grates.
  6. Thread marinated chicken onto skewers.
  7. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
  8. Serve chicken skewers hot with tzatziki sauce on the side.
