Description
These Greek Lemon Chicken Skewers are marinated in a zesty lemon-herb mixture and grilled to perfection. Served with a creamy homemade tzatziki sauce, they’re perfect for a light dinner or summer gathering.
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 8 wooden or metal skewers
- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/2 cucumber, peeled, seeded, and finely grated
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- 1 clove garlic, finely minced
- Salt and pepper, to taste
Instructions
- Soak wooden skewers in water for at least 30 minutes if using.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Add chicken pieces to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes or up to 2 hours.
- While chicken marinates, prepare the tzatziki sauce: Combine yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper. Mix well and refrigerate until ready to serve.
- Preheat grill to medium-high heat and oil the grates.
- Thread marinated chicken onto skewers.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
- Serve chicken skewers hot with tzatziki sauce on the side.
