Ingredients
- 4 medium zucchini
- 4 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup bell peppers, chopped
- 1 cup mushrooms
Instructions
- Preheat the grill to medium heat, about 350°F (175°C).
- In a small bowl, mix the melted butter, minced garlic, oregano, salt, and pepper until well combined.
- Slice the zucchini into thick rounds. Thread zucchini, bell peppers, and mushrooms onto skewers, leaving a little space between pieces for even cooking.
- Brush the skewers generously with the garlic butter mixture.
- Grill the skewers for 8–10 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove from the grill and drizzle with any remaining garlic butter before serving warm.
