Ingredients
- 2 tablespoons olive oil, divided
- 2 large sweet onions, thinly sliced
- 1/2 teaspoon salt
- 4 pieces naan or flatbread
- 1/2 cup apple butter
- 1 cup crumbled blue cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-low heat.
- Add sliced onions and salt, and cook slowly for 30–40 minutes, stirring occasionally, until deeply caramelized. Set aside.
- Preheat grill to medium heat.
- Brush each piece of naan or flatbread with remaining olive oil on both sides.
- Grill flatbreads for 2–3 minutes on each side, until slightly crispy and grill-marked.
- Remove from grill and spread each with apple butter.
- Top with caramelized onions and crumbled blue cheese.
- Return to grill for 2–3 more minutes until cheese is slightly melted.
- Remove from grill, sprinkle with fresh parsley if desired, and serve warm.
Notes
- Apple butter adds a sweet contrast to the tangy blue cheese—feel free to adjust quantities to taste.
- Use store-bought naan or homemade flatbread as the base.
- This flatbread can also be made in a grill pan or oven if outdoor grilling isn’t an option.
